How good do I need to be with NFL stats to play in fantasy football?

It's really not difficult. The best team you can get are the teams with the best lines. O-line and D-line. Also get players that are not prone to injury. The ones that are prone to injury will go out for season or will be out 2 games etc etc. and then youll be stuck with your star on the bench. Also don't be afraid to take risks. I took Cam Newton who was like 146 as my second quarterback and he became my starter putting up 20+ points a game.
Think about it. The teams with good O line will give the QB more time to make completions if not touchdowns and the running backs bigger holes for longer runs. A good D-line will rush the quarterback making him make dumb decisions and throws incompletions or interceptions as well as stop the running game and make sacks for you.
Really the key is to play out a season and understand how it works. Your first season will not be perfect. It's a trial and error thing.
You don't have to be great with them.. They'll show you all the stats on the site you play it on. I like espn.com
You dont need to be good at all most fantasy leagues have best player selection during the draft and after that if someone gets hurt you can drop them and pick up the best player on the market. i reccomend looking at all of last years stats and learn what all the stats mean like TD's=touch downs.
